Lotus tubers are edible and can be used in many delightful recipes. Many recipes from China, Thailand, Vietnam, India and Japan list lotus tubers in their recipes. When planting as an edible vegetable, tubers must be planted in large, earth bottom ponds, rather than in containers. Tubers must reach 2-4" in diameter for edible purposes.
